Mint Coriander Dip
(Dhania-Podina Chutney)
Makes 1 cup

1/3 cup plain yogurt
2 Tbsp. cold water
1 Tbsp. finely chopped onions
1/3 tsp. finely chopped fresh ginger root
1-2 green chilies, seeded
1 tsp. Kosher salt
3/4 tsp. sugar
1/4 small green pepper, cored and chopped
1/4 cup packed fresh mint leaves (or substitute 2 tsp. powdered dry mint leaves)
3/4 cup packed fresh coriander leaves

Put all ingredients in container of food process or blender and
blend until finely pureed and reduced to a creamy sauce. Check
for salt, and pour into a small bowl. Cover and chill thoroughly
before serving.
