Mushroom Curry

8oz mushrooms sliced
3-4 cloves garlic
1/2 onion chopped fine
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon chili powder or more
1/2 teaspoon tumeric
1/2 teaspoon salt
1 tablespoon tomato paste

2-3 tablespoons of chopped fresh cilantro

Saute onion for 2-3 minutes in 3 tablespoons of oil. Add garlic
and saute for 1 minute.

Add Cumin, Coriander, Chili and Tumeric. 'Bhoona' or stir fry over
medium heat for 4-5 minutes. Add a tablespoon of water if the
mixture becomes to dry.

Add the mushrooms, Tomato paste and salt. Stir. Add 3 tablespoons
of water, lower the heat to a simmer. Cover for 10 minutes.

Remove from heat and add chopped fresh cilantro ( don't leave out
adding the cilantro )
