Naan Bread
ingredients for 4-6 pieces

50ml warm water
pinch of sugar
1/2 tsp active dry yeast
500g strong white flour
1/2 tsp salt
50ml natural yogurt
2 crisp green apples,p eeled cooked and pureed
60g golden raisins
60g slivered almonds
1 tbsp coriander leafs
2 tbsp grated coconut

Mix water and sugar and sprinkle over yeast. Leave for the yeast
to dissolve. Put flour and salt in a bowl and make a well in the
centre. Add yeast mixture and yogurt and make into a soft dough
adding about 150 ml of tepid water. Knead for 10 minutes, then put
it in a oiled bowl and leave it covered with a cloth for 3 hours.
Divide in 4-6 pieces and roll out to 8'' ovals. Pull one end to a
teardrop shape. Lay on floured surface and prick all over with a
fork. Brush both sides with oil. Cook for three minutes on each
side under a preheated grill at the highest setting. It should have
dark brown spots all over.

Spread with a teaspoon of apple puree and sprinkle with the raisins,
slivered almonds, coriander leaves and coconut.
