2 large cucumbers
2 teaspoons salt
1 clove garlic, minced
1 small piece ginger, minced
1 cup yogurt
lemon juice to taste
Peel cucumbers and slice very thinly. Sprinkle with salt and chill
about 1 hour. Pour off liquid, pressing out as much as possible.
Mix garlic, ginger, and yogurt, and add to cucumbers, combining
thoroughly. Add lemon juice to taste. Serve chilled.
