Uppuma 2 cups cream of wheat (farina) 1 Tbsp butter (opt) 6 oz mixed vegetables (opt) 1 small onion, cut into strips 1 small green chili, chopped and seeded 1/2 tsp ginger root, chopped (opt) 2-3 curry leaves (opt) salt, to taste water (1:1 with farina for fairly dry, more for porridge consistency)
Saute the farina (either in the butter or roast it dry) until it's golden brown and set it aside. Bring the water, salt and vegetables to a boil and simmer until the veggies are cooked. Add the chili, ginger and curry leaves. Add the farina. Stir well, remove from the heat, and let it sit covered until the water has been absorbed.
Eat with hot Indian pickles (lemon or mango works very well) or sugar.
