Uppama 1/4 c. vegetable oil (or use 1/8 c. vegetable oil and 1/8 c. olive oil) 1 med. yellow onion, chopped 1 1/2 tsp. whole mustard seeds 1 green chili, minced 1 tsp. crushed dried red chilis 1 c. farina 5 c. hot water 1/2 c. sliced green onions 1/3 c. finely diced carrots 1 large ripe tomato, diced 2 tsp. salt optional garnish: lemon juice and fresh cilantro Heat the oil in a large saucepan and saute the onion (yellow) in it until translucent. Add the mustard seeds and both chilis and stir over medium heat for a minute or two. Add the farina and stir for another few minutes.
Still stirring, gradually add the hot water. Beat lightly with a wire wisk to get rid of any lumps. Add the green onions, diced carrots, tomato, and the salt. Simmer the mixture over low heat, stirring often, until it is quite thick and the vegetables are tender, 45 minutes to an hour.
