This is Arborio Rice Pudding with Currants and Sultanas
While other rice may be used, Arborio Rice has a wonderful rich, starchy outer cell and tendsto yield a heavy, smooth texture rice that will make your Italian Rice Pudding delicious, and unforgettable.
1 1/2 c Rice
1 1/2 c Heavy Cream
1 1/2 c Whole Milk
2 Cinnamon Sticks
1/2 c Dark Brown Sugar
1/2 c Golden Raisins (Sultanas)
1/2 c Dried Currants
Put Milk and Cream in Saucepan on a med-high flame, add rice, and stir.Add Cinnamon Sticks, pinch of salt, and stir until mixture reaches a gentle boil.
Simmer for 20 minutes. Stir. Then, add your sugar, raisins, and currants.
Take out the Cinnamon Sticks, and place pudding in individual bowls.
Serve hot or cold with whipped cream.
