Lamb Chops
4 lamb chops, 1 1/2" thick 1 cup cashews ( pulverized in a food chopper) 1/8 tsp ground cloves 1 Tbsp crushed garlic 1 Tbsp Italian bread crumbs 1 egg with 2 Tbsp milk for a wash 1/8 tsp cayenne pepper 1/4 cup peanut oil 4 Swiss cheese slices 1 red onion, sliced 1 red bell pepper, sliced anchovy fillets, optional
In a heavy skillet heat the oil until almost smoking.
In a separate dish mix cashews, cloves, bread crumbs, pepper. Dip the lamb chop into egg wash then into dry mix. Place into hot skillet for 1 minute per side, then remove and place on a broiling dish. Top with the rest of the ingredients (cheese goes on first) and end with the anchovy. Broil in the broiler for about 12 minutes. Serve hot.
