Lamb Kebabs 01

Spicy Lamb Kebabs Serves: 4
500g / 1lb lamb mince 1 small onion, grated 50g / 2oz fresh breadcrumbs 1 level tablespoon ground cumin 2 tablespoons freshly chopped coriander salt and freshly ground black pepper 150g / 5oz natural yogurt 5cm / 2 inch piece cucumber, finely diced 2 tablespoons freshly chopped mint
Place the lamb mince, onion, breadcrumbs, cumin, coriander and seasoning in a bowl and mix well. Using lightly floured hands, roll the mixture into 24 small balls. Chill for 30 minutes then carefully thread 3 balls onto 8 skewers or kebab sticks.
Place under a preheated moderate grill for 20 minutes, turning occasionally until golden and cooked through. Meanwhile, mix together the yogurt, cucumber, mint and seasoning to taste and serve with the spicy lamb kebabs.
