Lamb Shanks and Beans lamb shanks, about 1 pound per person, cleaned of fat 2-3 diced carrots 8 ounces dried Great Northern Beans, soaked 1-2 hours in water 1-2 medium onion, chopped 2-3 cloves chopped garlic or more 1/4 cup chopped fresh parsley salt and pepper to taste 8 ounces chicken broth, optional 1/2 cup dry white wine, optional Brown lamb shanks in a little oil in a large pot. Remove from the oil and drain well. Drain the beans. Return the lamb shanks to the pot and add the drained beans, vegetables and water or chicken broth to nearly cover the meat mixture. Add some salt and pepper. Bring to a boil, reduce heat, cover and simmer 2-3 hours stirring once in a while. Cook until beans and meat are tender. Before serving, remove the lid and turn heat to high to reduce excess liquid if necessary.
