SHAWRRMA (Marinated Grilled Meat)

1 kg (2 lbs.) lean lamb (leg) or beef

1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon black pepper
Salt
4 cloves garlic crushed
1 onion, finely chopped
1/4 cup lemon juice
1/4 cup water
1/8 cup white vinegar
1/8 cup olive oil

Slice the meat very thinly into circles, about 12 cm (4 1/2 inches).
Mix the marinade ingredients together thoroughly and put over the
meat slices. Leave in a covered container in the refrigerator
overnight. Remove the meat from the marinade and arrange the slices
under the grill. Grill, turning once, so that it is browned on both
sides. Cut the grilled meat into fine shred and serve in the pouch
of half a loaf of Khubuz together with sliced tomatoes and onions.



Taratur Bi Tahini (Tahini Sauce)

1/2 cup tahini
1/2 cup lemon juice
1/4 - 1/2 cup water
1 tsp. Salt
2 cloves garlic, crushed

Place crushed garlic and salt in a mixing bowl. Add the tahini and
mix well. Add the lemon juice and water alternately and stir until
smooth. You will notice that the water thickens the paste and the
lemon juice thins it. Chill. Taratur bi Tahini can be served as a
dressing for salads, a bread dip, a sauce for veggies or Falafel
and with lamb or fish dishes.
