Brine for Smoking Fish
1/3 cup sugar 1/4 cup non-iodized salt (pickling salt) 2 cups soy sauce 1 cup water 1 cup dry white wine (or beer) 1/2 tsp. onion powder 1/2 tsp. garlic powder 1/2 tsp. black pepper 1/2 tsp. Tabasco Sauce
Mix thoroughly.
Brine salmon, steelhead (or other large trout) chunks at least 8 hrs. Rinse thoroughly and pat dry. Then let air dry at least one hr. prior to smoking.
