Honey Brine
1 gal water 1 cup kosher salt 1 ounce tender quick 1 cup honey 3 bay leaves 1/4 tsp. ground cloves 1/2 tsp pickling spices
Mix ingredients, and bring to a boil. Allow to the brine solution to cool to room temperature. Place turkey in brine and refrigerate for 24 hours.
Rinse turkey very well twice. Rub with your favorite spices and smoke/cook. Smoke at 325 to 350 for best results.
