Fennel Rub 02

Hot and Fragrant Rub
2 tablespoons fennel seeds
2 tablespoons cumin seeds
2 tablespoons coriander seeds
1/2 tablespoons fenugreek seeds
1 clove
1/2 cinnamon stick
2 cardamom pods
salt and freshly ground black pepper
Lightly toast all the ingredients in a pan over a gentle heat before
pounding or crushing into a fine powder. This can then be rubbed
generously over your chosen meat.
