Yuan Marinade (Fish Marinade)

2 parts sake
1 part mirin (optional)
1/2 part regular Japanese soy sauce (not tamari)
1/2 part thin soy sauce called usukuchi found in Japanese markets

Mix all ingredients. Marinate the fish turning once in a while
anywhere from 2 to 10 hours (even overnight depending on the size
of the fillet). Grill the fish, brushing with the sauce twice.
The fish can be served with pickled ginger.

You can vary the time to fit the other dishes you are serving--saltiness
will increase with time.
