Rosemary Marinade for Halibut Steaks
1/2 cup orange juice 1/2 cup fresh lemon Juice 1/2 cup dry white wine 3 Tablespoons soy sauce 2 Tablespoons tequila or rum 1/2 cup fine chopped red onions 2 Tablespoons rosemary 2 Tablespoons chopped parsley 1 Tablespoon finely chopped / minced fresh Garlic 1/4 Teaspoon salt white or fresh ground Black pepper.
2 to 4 fresh Halibut steaks
Combine the marinade ingredients (I use an empty large-sized Tomato sauce Mason type jar with lid). Shake until well mixed. Rinse Halibut steaks with cold water, pat dry with a paper towel and place side by side in a compatibly sized Pyrex baking dish. Pour the Marinade over the steaks. Place in refrigerator for at least one hour (or longer if time permits). Turn once. Coat cold cooking grate of barbecue grill or grill cooking "basket" (works best) with spray type vegetable or olive oil to lessen sticking. Pre-heat to medium - medium high. Place steaks about 6 inches from heat source. Broil 6 minutes per side depending on thickness. Serve with your favorite side dish.
