GARLIC & PEPPER PASTE FOR STEAK

2 Tbsp coarsely-ground black pepper
1 Tbsp kosher salt (or less)
8 large cloves garlic
1/4 cup olive oil
4 rib-eye steaks, 8 oz each, (approx 1 inch thick)

Pour pepper, salt and garlic into food processor while running;
process until almost smooth. Add olive oil and mix well. Rub
mixture into both sides of each steak and place in shallow dish.
Cover and marinate in refrigerator overnight. Heat grill to high
and cook steaks about 7 minutes per side for medium doneness.
