Oriental Plum Sauce Marinade

2/3 cup plum sauce or duck sauce
2 tsp hoisin sauce
2 Tbsp dry sherry
1 Tbsp low sodium soy sauce
1 tsp sesame oil
2 Tbsp peanut oil
1 Tbsp grated ginger root
2 cloves garlic, minced
1/4 cup fresh cilantro leaves, chopped
1/2 tsp crushed dried red chili pepper

Combine the plum sauce, hoisin, sherry and soy sauce in a nonreactive
mixing bowl. Whisk in the oils a little at a time. Add the ginger,
garlic, cilantro and chili peppper. Makes 2 cups.

Use on:

Chicken breasts (4 to 6 hours hours)
Chicken wings (6 to 8 hours)
Spare Ribs (8 hours to overnight)
