1 medium dried ancho chili 3 tablespoons cumin seeds 2 tablespoons coriander seeds 3 tablespoons pureed canned chipotle chilies in adobo sauce 2 tablespoons minced garlic 2 tablespoons minced fresh cilantr 2 tablespoons ancho or pasilla chili powder 2 tablespoons coarse salt 2 tablespoons freshly ground pepper Place ancho in bowl. Cover with warm water and soak about an hour. Drain and puree.
Toast cumin and coriander seeds in a cast iron skillet over medium heat, stirring frequently, until fragrant. Grind seeds.
Combine 2 tablespoons ancho chili puree, cumin, coriander and rest of ingredients in a food processor. Puree into a thick paste. Use for as a rub for fish and meats.
