Teriyaki Sauce for Chicken
1/4 cup soy sauce
2 tablespoons mirin
2 tablespoons dry sherry or sake
2 tablespoons brown sugar
2 tablespoons grated fresh ginger
Combine all ingredients, stirring till sugar is dissolved. Add
chicken and marinate at least two hours covered. Stir occasionally.
