ALBONDIGAS (Meatballs) Paraguay
3 onions, minced 1 garlic clove, minced 2 tablespoons cooking oil 2 pound ground beef, lean 1 cup soft bread crumbs 1 hard cooked egg, cut into wedges 2 cups tomato juice 2 whole tomatoes, chopped salt to taste
Cook 2 onions and the garlic in oil. Mix with beef and bread crumbs, Form into balls, placing a piece of hard cooked egg in the center of each. Brown in a skillet. Meanwhile, simmer tomato juice, remaining onion and tomatoes until thicked into a sauce. (you can use 2 1/2 cups canned tomato sauce, spanish style and cook down with onions) Season with salt if needed. add meat balls. Continue cooking for about 45 minutes, stirring occasionally. Makes 8 servings.
