Beef Enchilads

1-2 lbs ground beef or turkey
8 oz sour cream
chili powder to taste
salt to taste
1-2 packages small flour tortillas
2 cups shredded cheese
1 T garlic
2 T olive oil
24oz can of chopped tomatoes drained
1 green bell pepper
1 red bell pepper
1 onion

Brown meat and drain. Add to large bowl and mix in sour cream,
salt, chili powder and then roll a little into tortillas like you
would do a burrito. Lay in a baking dish.

In large frying pan brown garlic in olive oil and then add tomatoes,
peppers and onion. Simmer about 10 minutes. Pour onto top of
enchiladas. Add cheese to the top of vegtables and put in oven at
375 for about 20 mins. Serve with mexican rice and refried beans.
