Buquelos de viento 1 Tbsp. sugar 4 eggs 1 cup milk 1 Tbsp. butter 1/2 tsp. salt 1 3/4 cup flour 1/2 liter (about 1/2 quart) oil for frying 1 cup sugar to cover the buquelos (you can also mix sugar and cinnamon) Mix the sugar and the eggs with a mixer. Add the salt, butter and milk, and continue mixing. Mix the flour little by little until it thickens a bit. (The consistency of the batter is similar to that of pancakes). Put the oil to heat in a big pan. Put the mold in the oil to have it heat a bit. Take the mold and put it into the batter, let it drip and put into the hot oil. Leave a couple of seconds, and the buquelo should come loose from the mold by itself. Once the buquelo is a slight golden color take it out and put on a mold covered with paper to absorb the excess oil. Pass the buquelo over the sugar to coat and it is ready to eat. Repeat from the heating of the mold for the rest of the batter.
