BUQUELOS (FRITTERS) 1 teaspoon salt 1 teaspoon baking powder 2 tablespoons sugar 4 cups flour 2 eggs 1 cup milk 1/4 cup butter, melted oil or fat for frying sugar and cinnamon mixture or sugar and ground cloves Sift all the dry ingredients together. Set aside. Beat the eggs thoroughly; then beat in the milk. Stir the dry mixture gradually into the egg-milk mixture; then add butter. Turn on to a lightly floured board, and knead very gently until the dough is smooth and elastic.
Divide in about 40 small or 24 large balls. Roll these out to approximately 4 inches or 6 inches, respectively. Fry in very hot deep fat or oil (370 :F. on the thermometer) until delicately browned on both sides. Drain on paper towels, and sprinkle with the cinnamon and sugar mixture, or with sugar and ground cloves.
Serve as a cookie; or make a light syrup, pour over the buquelos, and serve as a dessert.
