Mexican Capirotada serves 12
4 bolillo breads sliced into rounds 4 cups sugar 1 cup unsalted peanuts 1 cup raisins 1 cup fresh cheese, chopped in squares 1 stick cinnamon 1/2 cup colored chips nonfat oil to fry
Boil the sugar and cinnamon in two cups of water to form a syrup.
Fry the slices of bread or baguette in a pan with nonfat oil, until the bread looks crispy, remove from the pan and place them on a paper towel to drain.
In a good sized pot place some slices of bread (not all of them) and add them a little of peanuts, raisins and cheese, then continue with another layer of bread slices and go on until everything finishes. Pour the syrup you made before and mix very smoothly.
Place the pot in a bath of hot water (bain marie) and simmer for half an hour. Let the dessert cool and place at the center of the table and let everyone serve.
