Frijoles a la Charra Soup

1 pint (2 cups) cooked, drained pinto beans
1 pint liquid from beans
1/4 cup diced tomatoes
2 tbsp. chopped onions
1 fresh jalapeno, finely chopped
1/4-lb. bacon or pork pieces cut into 1/8-inch dice
1-3 tbsp. cilantro leaves, chopped
1/4 tsp. lemon juice

Bring beans and liquid to a boil in a soup pot. In a small skillet,
saute tomatoes, onions and jalapeno pepper with bacon. Remove
skillet from heat and drain excess fat. Add bacon mixture to
boiling beans. When soup comes to a boil again, add cilantro and
lemon juice. Simmer 5 minutes and serve. Makes 4 servings.

Side note: instead of bean liquid, I sometimes use beer making it
borracho bean soup.
