Chicken Enchiladas

12 corn tortillas
oil
1 chicken breast cooked and shredded
1/4 cup chopped jalapeno peppers
1/2 cup chopped onions
1/2 cup graded cheddar cheese
8 oz cream cheese

1/4 cup oil
4 tablespoons flour
2 tablespoons chili
2 teaspoons cumin
1 teaspoon salt
2 cups water
2/3 cup of tomato sauce

In a large hot skilled add oil and flour. Add chili, cumin and
salt. Stir and add water and tomato sauce. Stir and allow to simmer
for a few minutes. Fry the tortillas in hot oil until soft. Mix
the ingredients, place enough mixture on each tortilla so you can
still roll it up. Place the rolled tortillas in an oven dish.
Cover with sauce, bake at 350 for 1/2 hour.

Can be served with extra sour cream for topping and extra hot sauce
to taste.
