Chili Con Queso

2 cloves garlic, finely chopped
1 28-ounce can Italian plum tomatoes
Salt and freshly ground pepper
2 cans peeled green chilies, finely chopped and seeded
1-1/2 cups rich cream sauce
1 pound shredded jack or medium sharp Cheddar cheese

Combine the garlic, tomatoes, and salt and peper to taste. Cook
down 20 minutes over medium heat, stirring occasionally. Add the
chopped green chilies. Cook and stir until the mixture is thick
and pasty. Add the cream sauce and cheese. Serve warm from a
chafing dish or electric skillet kept at low heat.
