Chile Rellenos
8 fresh green chiles 1 cup grated Longhorn (or Velveeta) Cheese 1/2 cup all-purpose flour 1 tsp. paprika
1/2 tsp. garlic salt 1/2 tsp. baking powder 2 eggs, well beaten 1 cup cooking oil
Roast and peel chiles, cut off the top of pod and remove seeds. Divide cheese equally among chiles and fill each chile with cheese (you can fill them either through the top or cut a slit down the center). Mix flour, paprika, garlic salt and baking powder together, and roll each chile in the flour mixture, then egg. Refrigerate for 15 minutes. Heat oil and fry chile in hot oil until golden brown. Place in an oven-proof serving dish and keep warm in a warm oven until all the chiles are done.
Serves 4.
