FLAN ALMENDRA

1/2 cup sugar
2 tablespoons water

1 cup milk
3 eggs
3 egg yolks
1 teaspoon vanilla
1 cup slivered almonds
1/4 cup sugar

Preheat oven to 350 degrees.

Heat sugar and water in a small saucepan over medium heat. Heat
and boil mixture until it caramelizes. (I find that covering the
pot and letting the mixture boil without stirring it works best).
Pour the caramelized sugar into a 9-inch round cake pan and cool.

Combine the rest of the ingredients in a blender; process at high
speed for one minute. Pour over caramelized sugar; cover the pan
with aluminum foil and place in a large shallow pan. Pour hot water
to depth of 1 inch into the larger pan. Bake for 55 minutes or
until a knife inserted near the center comes out clean. Remove
the cake pan from the larger pan and uncover the cake pan. Cool
at least 30 minutes. Loosen sides with a knife.
