Flan
1/2 c brown sugar 1/4 c water 3 eggs 2 1/2 c milk 1/2 c sugar 2-5 T vanilla
Set oven to 350F. Place in heavy skillet the brown sugar and water.
Dissolve over medium heat and bring to a boil. Simmer for 10 minutes, stirring constantly. Pour into custard pan or bread pan and swirl it to coat the bottom and edges completely.
Beat until light, yellow and thick the eggs, milk, sugar and vanilla. Pour over caramel in pan. Place pan into shallow pan filled with hot water. Bake until firm (about 1hr).
Variations: Use another flavor of extract instead of vanilla. Pour brandy, kalua, etc. over finished flan (Flan is usually served inverted, with the liquified caramel spilling over the custard part).
