Guacamole 2 avocados peeled and pitted 2 Tbsp fresh lemon juice salt and pepper to taste 4 ounce can chopped, mild green chilies. drained 1/2 onion or more to taste, very finely chopped 1 medium tomato peeled, seeded and diced garlic powder to taste optional small garlic clove finely minced cayenne pepper to taste Mash avocados and lemon juice with a fork. I don't like to mash them too smooth, we like a little chunk to the guacamole. Stir in salt and pepper, chilies, onion, garlic and tomato (garlic powder and cayenne if using). Pour into a serving bowl. Put the reserved pit into the middle of the guacamole (this will help it from turning brown) then cover tightly with plastic wrap, put into refrigerator until ready to serve and allow time for the flavors to blend. Before serving, remove the pit and discard. Serve with corn chips. Also good on a green salad.
