Horchata - Rice Water 4 cup rice 3 cinnamon sticks
1 can evaporated milk 1 cup sugar or to your taste 2 tsp. vanilla Water as directed in directions First step is to grind up the rice and cinnamon sticks in either a blender or bean grinder. Grind until it is a rice powder and very fine. The cinnamon sticks should also be ground up as it gives a better taste then ground cinnamon. This is the dry base for the horchata and can be kept in the refrigerator for as long as it takes for you to use it. To make the actual drink, take 2 cups of this mixture and put it into a big pitcher. You need to add as much water to the pitcher as you normally would take to fill it up. (about 6-7 cups of water)Then add the can of evaporated milk, vanilla and sugar to taste. Mix the horchata up so that all the powder and ingrediants are mixed up. It will be very cloudy and is not ready to drink yet. Put it in the refrigerator for about 2 hours. The drink should be cold and the rice mixture should have settled to the bottom. It is ready to drink. Do not mix up the mixture again. Once the drink is gone, the mixture should be thrown away and restarted. Keeping the horchata mixture to long will make it start to get bad. This drink is said to be very helpful for stomach aches and when you are sick. We drink it as a refreshing drink in the summer!
