Huevos Rancheros 3-4 cans tomato sauce 2 cloves garlic or to taste 1/2 onion diced sliced jalapenos eggs grated cheese flour tortillas This recipe makes a red sauce instead of green and it is a recipe that I have developed over the time that I've been making it. This is one of those reciped that will get better with experience and you will find that it tastes better every time you make it. All in all it is a simple recipe.
Put onions, garlic, and jalapenos in a pan and let cook. When you think they have cooked enough (onions become slightly transparent) pour tomato sauce into the pan. Stir well. Season to taste.
Fry some eggs. I fry two per serving. While doing that it's best to have someone helping. Have them take a flour tortilla and throw it on a skillet to make it soft. Don't burn the tortilla but flip it on the skillet for about 10 seconds each side. Then place your tortilla on a plate, put a thin layer of sauce on the tortilla, throw two fried eggs on there, cover with more sauce (however much you want), then top with cheese.
