Pupusas
2 lb. masa dough (follow directions on masa harina package) 1 c. filling
For filling, use refried black beans or mixture of 3/4 c. farmer cheese and 1/4 c. feta cheese, allowed to stand in fridge 1 day.
Use 2 tbsp. masa dough for each tortilla. Shape into a tortilla 2 1/2 inches in diameter and 1/4 inch thick (smaller and thicker than a normal tortilla). Scoop 1 tbsp. filling onto center of one tortilla; cover with a second and seal edges tightly with a fork. Bake on a hot dry griddle 6-8 minutes until brown on both sides. 10 servings.
Note: Pupusas are traditionally served with curtido, which is a vinegary coleslaw.
