REFRIED BEAN AND CORN QUESADILLAS

1/2 cup frozen corn, thawed
2 tablespoons thinly sliced green onion
1/4 teaspoon ground cumin
1 can vegetarian-style refried beans
3 tablespoons chopped fresh cilantro
3/4 cup shredded Monterey jack cheese
10 flour tortillas
sour cream
vegetable cooking spray

Combine corn, onions, cumin, refried beans and cilantro in a bow
and stir to mix thoroughly. Spread some of the mixture on a flour
tortilla, sprinkle with shredded cheese and cover with another
tortilla.

Coat a large nonstick skillet with vegetable cooking spray and heat
over medium heat until hot. Add 1 quesadilla and cook 3 minutes on
each side or until golden brown. Remove quesadilla from skillet
and keep warm in a baking dish in a 2000F oven. Repeat procedure
with remaining quesadillas.

To serve, cut each quesadilla into four wedges. Serve topped with
sour cream. Or, use your favourite salsa instead.
