Quesadillas

1 dozen flour tortillas
grated cheese (half cheddar and half Monterrey Jack)
2 tsp chile powder
1 lb canned pinto beans, drained
1/2 lb ground beef
1/2 cup chopped mild onion
1 avocado, minced
olive oil

Cook the pinto beans and ground beef. I have to cook the beef
seperately since one kid woun't east beans. Brush a griddle with
a little olive oil or use a non-stick griddle. Place a tortilla on
the griddle and sprinkle toppings on it. Top with a second tortilla
and press together gently. When the tortilla starts to brown and
the cheese starts to melt, carfully turn over. Cook until the
tortilla starts to get crispy and cut into wedges.

This works with lots of other combinations.
