Refried Beans

1 lb. dry pinto beans
About 1/2 cup lard
3 cloves of garlic or about 1 tablespoon garlic powder
1 1/2 teaspoons salt

Sort, then soak the beans with enough cold water to cover and let
stand at least 8 hours (overnight preferably). Drain and rinse
well. Replace back into pot and again, cover with enough cold
water to cover about 2" above. Add remaining ingredients and simmer
slowly until tender.

Scoop what you need into a frying pan sprayed with cooking spray
or very little oil. Cook down the liquid a little, on medium heat,
then mash with potato masher. Turn off heat, remove, and add about
1 1/2 cups of shredded Monterey Jack Cheese.
