Sopaipillas
2 cups flour 2 tsp. baking powder 1 level tsp. salt 1 tsp. sugar 1 tbsp. pure lard or shortening warm water oil for deep-fat frying honey
Mix flour with baking powder, salt and sugar. Cut lard (or shortening) into flour mixture. Add enough warm water to make a medium-soft dough similar to a pie crust. Put dough in a covered bowl and let stand at room temperature for 30 minutes. Then roll dough on floured board to 1/8 inch thickness. Cut into 3 inch triangles and fry in deep hot fat until sopaipillas are fluffy and golden brown. Remove from fat and drain on paper towels. Serve hot with honey.
Makes 2 dozen.

I planned a Mexican dinner for my family, but wanted something special for dessert to keep in the theme of the Mexican dinner. I found your web site and tried the sopapilla recipe. It was a big hit!!! I put out melted butter, honey and powdered suger with cinnimon for everybody to do their own thing to taste. Thank you so much for a great recipe. I will use it again.
