SOPAIPILLAS Yield: 36 servings
1 pk dry yeast 4 c flour 1 t baking powder 2 T lard oil for frying 1/4 c warm water 1/2 t salt 2 T sugar 1 1/2 c scalded milk honey
Dissolve yeast with one tablespoon sugar in water, let proof. Combine flour, rest of sugar, salt and baking powder, cut in lard. Make a well in the center of the mixture. Add yeast mixture and milk, mixing well. (The dough will be sticky.) Turn dough out onto a lightly floured surface and knead 15 to 20 times. Roll dough to 1/4" thick- ness, cut into three-inch squares. Heat one-half inch of oil in a large skillet to about 370 F. Gently place dough squares, a few at a time, into the oil, preessing lightly down with the back of a fork until the dough starts to bubble and puff up, turn and cook on the other side until barely golden in color. Drain in paper towels. Serve with honey.
NOTE: When frying sopaipillas, leave a few in the skillet when adding additional sopaipillas, this will absorb the heat of the oil and keep it from overheating.
