Sopaipillas
4 cups all-purpose flour, sifted 1 1/4 teaspoons salt 1 tablespoon baking powder 3 tablespoons sugar 2 tablespoons shortening 1 1/4 cups milk oil for frying butter
Stir flour to blend with salt, baking powder, and sugar; rub in shortening with fingers until particles are all of even texture. Stir in enough milk to make a soft dough just firm enough to roll. Allow dough to stand for 30 to 60 minutes, then on a lightly floured board roll 1/4 inch thick and cut in diamond shaped pieces. Fry in 1 1/2 inches salad oil heated to 390 to 400. Turn at once so they will puff evenly, then turn back to brown on both sides. Drain on absorbent material. Serve hot or cold with butter, as a bread. Store air-tight. Makes 4 dozen.

I had forgotten how to make sopas... this recipe was identical to the ones I used to eat! FLAWLESS!!!
