Shrimp filling for tamales
1 lb small shrimp, peeled and deveined
1 onion chopped
4 cloves garlic, minced
4 chiles anchos, roasted, seeded, soaked in hot water
2 chiles guajillos, roasted, seeded, soaked in hot water
1 1/2 c chopped tomatoes
2 tsp grnd cumin
salt to taste
1/2 tsp freshly ground black pepper
2 tbs peanut butter
Saute onions and garlic in oil. Blend chiles with a bit of the
soaking liquid, add tomatoes, salt cumin pepper. Add to onions.
Simmer for 20-40 minutes. Add shrimp, cook for 10 more minutes or
until srimp is done.
