Tortilla Soup
6 slightly stale corn tortillas 4 cups chicken stock 1/4 cup oil 3 chiles chipotle, sliced in strips, with 1 tablespoon of the adobo sauce it is packed in(do not use dry chipotles) 4 oz. Queso Fresco or Monterey Jack cheese, shredded Cilantro, chopped for garnish
Slice the tortillas into thin strips 1/4 inch wide x 2 inches long. Fry the strips until crisp in the oil. Remove from the oil, drain on paper towels and set aside. In a stockpot, bring the stock to a boil, add the sliced chili chipotles and adobo sauce, and simmer for ten minutes. Place some tortilla strips in each bowl, ladle over the stock (including some chili chipotle) and stir in some of the shredded cheese. Top with chopped cilantro and serve immediately.
