BANANA BUTTERMILK CAKE 2 1/2 cup flour 1 cup brown sugar 1 tsp. salt 2 eggs 1/2 cup buttermilk 1/2 cup chopped nuts 3 tsp. cinnamon 3/4 cup sugar 1 tsp. nutmeg 3/4 cup cooking oil 1 tsp. baking powder 1 tsp. soda 1 cup mashed bananas
Blend flour, sugars, nutmeg, salt and oil to make a crumbly mixture; set aside 1 cup of this mixture. To rest, add eggs, baking powder, buttermilk mixed with soda, and bananas. Stir until smooth batter is formed. Pour in greased 12 x 8 x 2 inch dish. Over cake sprinkle reserved crumbs; top with nuts and cinnamon. Microwave at high 12 minutes. After cake has cooled 10 minutes, you can drizzle with thin frosting if desired.

The flavors are wonderful in this cake. Texture is quite soft. Mine didn't bake in the center, but I've never made a microwave cake so don't know what/why. I have an old microwave. But the cake tastes fantastic. QUITE easy to make. I wonder if I could bake it -- I think that might be better. Also would maybe substitute 1/2 cup of whole wheat flour for a nice bit of texture -- and maybe less salt. A keeper, though.
