Chex Brand Caramel Corn Mix
4 1/2 cups favorite Chex cereal
4 cups popped popcorn
1/2 cup honey-roasted peanuts, (optional)
1/4 cup (1/2 stick) margarine or butter
6 tablespoons firmly packed brown sugar
2 tablespoons light corn syrup
1/4 teaspoon vanilla extract
Combine the cereals, popcorn, and nuts, if using, in a large
microwave-safe bowl. Set aside. Combine the margarine, sugar, corn
syrup and vanilla in a microwave-safe bowl. Microwave on high for
2 minutes or until the mixture is boiling, stirring after 1 minute.
Pour the syrup over the cereal mixture, stirring until all the
pieces are evenly coated. Microwave on high for 5-6 minutes, stirring
thoroughly every minute. While stirring, make sure to scrape the
sides and bottom of the bowl. Spread on wax paper to cool, stirring
occasionally to break up. Store in airtight container or serve.
Yield: 9 1/2 Cups
