Curry Chicken

3 cm cinnamon stick
30 g lemon grass (crushed)
1/2 Tbsp curry powder
1/2 Tbsp chili powder
3-4 cloves garlic
1 inch long ginger (crushed)
3 Tbsp oil

500 g chicken pieces
1/4 cup coconut milk
1/4 cup water
1 teaspoon salt

Combine first 7 ingredients and fry in a casserole on HIGH, uncovered
for 6 minutes stirring once while cooking. Add water, salt and
chicken pieces. Cover and cook on HIGH for 5-6 minutes. Stir in
the coconut milk and cook uncovered on HIGH for 2 more minutes.
Garnish with fresh coriander leaves.
