ITALIAN COURGETTES (800 watts)
500g courgettes, thinly sliced
3 stalks celery, thinly sliced
1 cup tomato juice
black pepper
1/4 tsp dried thyme
1/4 tsp dried basil
1/4 tsp crushed garlic
Place courgettes and celery in a small casserole. Add remaining
ingredients. Cover. Cook on HIGH for 8 - 10 minutes. Stir and
serve.
(I have thickened the juices with a little cornflour and served as
a sauce over the vegetables)
