Leche Quemada (Burned-Sugar Milk Candy)
2 cups pecan pieces 1/2 cup margarine 2/3 cup packed brown sugar 1 cup sweetened condensed milk 1 teaspoon vanilla extract
Butter an 8-by-8-by-2-inch pan (can be metal)%3B set aside. Place pecans in a 10-inch glass pie plate. Stirring after each 2 minutes, microwave on high 8 minutes or until pecans are roasted. Set aside.
Place margarine in a 2-quart glass measure or round heatproof glass casserole. (Note: Only use heatproof glass such as Pyrex. This candy mixture gets very hot.) Microwave on high 1 minute or until melted. Stir in sugar and milk.
Stirring after each 2 minutes, microwave on high 7 to 8 minutes. Using a wooden spoon, beat until mixture begins to stiffen. Add vanilla and roasted pecans. Pour into prepared pan. Let cool completely before cutting.
