MINTED LAMB (microwave 650 watts)

2 onions
2 sticks celery
1/2 cup pineapple pieces
800g lamb leg chops
4 Tbs flour
1/2 cup mint sauce
2 Tbs soy sauce
3 tsp gravy browning
1/4 cup pineapple juice
salt and pepper
juice of 1 lemon

Slice onions and celery, Combine in a flat cooking dish. Cook
covered on HIGH 4 mins. Add pineapple pieces. Trim excess fat
from chops and arrange in a single layer over vegetables. Combine
flour with all remaining ingredients. Pour over meat. Cook,
covered HIGH power 3 mins., then MED. LOW (50%) 18-20 mins. Rearrange
once during cooking. Stand, covered 15-20 mins. Serves 4.
