PARCHMENT CHICKEN

2 boneless chicken breasts
salt to taste
1/2 red capsicum, (or more)
2 sprigs rosemary
1 1/2 Tbsp lemon juice
a few frozen peas (opt)

Cut the capsicum into thin strips. Cut 2 squares of baking paper
large enough for each parcel. Spray one side with a little oil.
Place a chicken breast on each sprinkle with a little salt. Divide
the other ingredients between the 2 parcels. Fold into a parcel,
sealing tightly. Cook on HIGH 5 - 6 minutes, (depending on the
wattage of your machine.) Discard the rosemary before serving.
